Ashburn, VA: Do you have any family members that are absolute idiots?

I do. It’s one of my grandsons. 

I am not telling you anything I don’t tell him to his face. 

He is the Smartest, Dumbest Person I Know 

Here is what I mean. 

The kid is book-smart as all get out. When it comes to math and science, he can run laps around people. 

But when it comes to common sense, the kid couldn’t run 2 feet. 

Here is a perfect example: 

The kid was house sitting for me not too long ago. 

On our second day away, I sent him a text to see how the dogs were doing. 

He told me everything was fine. He also apologized for eating almost all my blueberry waffles.

I thought to myself, “Blueberry waffles? What?” 

We left him some food to eat, but I did not recall leaving waffles. 

I turned to my wife and asked her if she had left any blueberry waffles for him. She said, “No, we never buy blueberry waffles. We just get plain.”

Then It Hit Me Like a Ton of Bricks

I texted the boy and said, “Son, we don’t have any blueberry waffles.” 

He responded with, “Sure you do. Here they are.” 

Then he texted that picture below. 

I responded with, “Boy, read the box.”

There was silence for a while. 

Then he responded with “Umm..it says these are plain waffles 🤢

That wasn’t blueberries on those waffles. That was mold. 

He then called me, and he was a little freaked out.

I calmed him down and told him if he started getting nauseous or woozy, call 911. 

However, I told him he would likely be fine. 

Then I told him he owed me money. He said, “Why? For eating your moldy waffles?”

I said, “No. You basically ate penicillin. It should clear that Chlamydia right up! Pay me for the service.”

I thought that joke was hilarious. 

My wife and grandson, however, did not. 🤷

What Most People Don’t Know About Making Waffles

  • Separate the Eggs and Beat the Whites: Whipping egg whites separately and folding them into the batter makes the waffles lighter and crispier.
  • Use Cornstarch for Extra Crispiness: Adding a little cornstarch to the flour mixture helps make the waffles crisp on the outside while staying tender inside.
  • Don’t Overmix the Batter: Stir the batter until just combined to avoid overdeveloping the gluten, which can make waffles tough.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/4 cup cornstarch
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs, separated
  • 1 3/4 cups whole milk
  • 1/2 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract

Instructions

  • Preheat your waffle iron according to the manufacturer’s instructions.
  • In a large bowl, whisk together the flour, cornstarch, sugar, baking powder, and salt.
  • In a separate bowl, whisk the egg yolks with the milk, vegetable oil or melted butter, and vanilla extract until well combined.
  • In another bowl, beat the egg whites with a hand mixer or whisk until stiff peaks form.
  • Add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
  • Gently fold the beaten egg whites into the batter with a spatula until just incorporated. This step adds air to the batter, making the waffles light and fluffy.
  • Lightly grease the preheated waffle iron with non-stick spray or a little oil. Pour the batter into the waffle iron, spreading it evenly. Close the lid and cook according to the manufacturer’s instructions, usually for about 3–5 minutes, or until the waffles are golden brown and crisp.
  • Carefully remove the waffles and serve immediately with your favorite toppings, such as maple syrup, fresh fruit, whipped cream, or butter.
