Cambridge, VA: My best friend just got caught cheating on her husband of 40+ years. Here is how I found out.

Her husband and my husband are also close. We will call her husband “Rick”. My husband and I were relaxing on the couch on a rainy Sunday morning, and then we got a call from Rick. He asked if he could come over and speak to us privately. We said yes. Rick arrived and shuffled into our home. He looked down in the mouth. We all sat at a table, and then he showed us this.

He said he found it on his wife’s phone the prior day and took a picture of it for evidence. He knows the guy. The guy is MUCH younger. He planned to confront her, but he needed to cool off. Before he confronted her, he wanted to speak with me because I was a sex therapist for over 30+ years. He wanted to know 2 things:

I told Rick I had zero clue about the affair. As far as why…….…I didn’t know. However, I told him in my experience, there are 4 common reasons why women over 55 cheat on their husbands:

  • These affairs are mainly centered around sex. The woman doesn’t have to deal with the complexities of a marriage. So, the relationship is easy, simple, and satisfying.
  • Sometimes, it’s similar to why successful male executives date younger women. Women desire relationships with younger men because it’s a power play. This desire comes partly from a fear of aging.
  • The woman unexpectedly falls in love. This will either break up the current marriage or be a wake-up call for the husband. If it’s a wake-up call, he will battle for the relationship.
  • The new partner helps the woman feel special and boosts their self-esteem. Some women feel overwhelmed by life obligations. So they seek an affair for the emotional uplift their husbands don’t provide.

When I was done, Rick cried uncontrollably. I think he knew which of the categories his wife fell into. I had an idea as well, but it wasn’t my place to go there.

Ingredients:

  • 2 large boneless, skinless chicken breasts
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon Bald Buck Seasoning
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1/2 cup chicken stock
  • 3/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 cup sun-dried tomatoes, chopped
  • Fresh basil leaves, chopped (for garnish)

Instructions:

  1. Prepare the Chicken:
    • Slice each chicken breast horizontally to create two thin cutlets. In a shallow dish, mix the flour, Bald Buck Seasoning, and pepper. Dredge each chicken cutlet in the flour mixture, ensuring an even coat. Shake off any excess flour.
  2. Cook the Chicken:
    • In a large skillet over medium heat, add the olive oil and butter. Once the butter has melted and the mixture is hot, add the chicken cutlets. Cook the chicken for about 4-5 minutes on each side or until golden brown and cooked through. Once done, remove the chicken from the skillet and set aside.
  3. Prepare the Sauce:
    • In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken stock, scraping the bottom of the skillet to deglaze and incorporate any browned bits. Stir in the heavy cream and grated Parmesan cheese. Allow the mixture to simmer for 2-3 minutes, stirring occasionally. Add the red pepper flakes, dried oregano, dried thyme, and chopped sun-dried tomatoes. Stir to combine.
  4. Combine Chicken and Sauce:
    • Return the cooked chicken cutlets to the skillet, nestling them into the sauce. Let the chicken simmer in the sauce for an additional 3-4 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  5. Serve:
    • Garnish with freshly chopped basil leaves. Serve the Marry Me Chicken warm, pairing it with pasta, mashed potatoes,  rice, or crusty bread to soak up the delicious sauce.

Pro Tips:

  • Real Parmesan Cheese: Try buying a block of parmesan cheese and grate it yourself. Pre-grated store cheese often lacks flavor and doesn’t melt well in sauces.
  • Use the Oil from Sun-Dried Tomatoes: Instead of regular olive oil, use the oil from the jar of sun-dried tomatoes to sauté the chicken. This adds extra flavor to the dish.
  • Bald Buck: This is the secret ingredient. BBQ Pitmasters swear by it for their meats. By accident, I discovered it makes for one heck of seasoned salt. It adds an amazing, unique flavor. Yet, people can never pinpoint exactly what that flavor is. Try it in this dish. More importantly, experiment with it as a salt replacement.
