Cambridge, VA: I have a crush on a gay man.

My husband and I were married for over 40 years. I lost him not too long ago. It’s hard to put the feelings into words.

  • I need to move on. But I feel guilty. Having fun without him feels like betrayal.
  • I worry about moving on too fast. I don’t want to hurt my kids. 
  • I am so lonely. But when I try to meet new people, I feel uncomfortable.

These aren’t feelings I share out loud very often. Until recently. 

I went to the senior center for a jazz performance. I met two gentlemen. They were recently widowed. We bonded instantly. We talked about our experiences of moving forward after losing our spouses. They were easy to talk to and kind.  I had a wonderful time. We began meeting weekly. Soon, I developed a crush on one of them.

A couple of weeks back, I ran into them at the grocery store. I I was thrilled to see them. They had been in Australia for a few weeks, and I couldn’t wait to hear about their trip. So we decided to have dinner together.

That night we are at the dinner table, and I am having a ball! We enjoyed a simple, delicious meal and were on our second bottle of chardonnay.  The guy I have a crush on started telling a story. In the middle of the story, he says, “Since we’ve been dating….” and points to his friend. 

Chardonnay SPRAYED Out of My Mouth

There was an awkward pause as they both looked at me. They asked if I was alright. And then it hit my crush like a ton of bricks. He said, “You didn’t know we were gay, did you?” I wanted to slide down and hide under the table. I felt so embarrassed. I responded by saying, “Sorry, fellas. Apparently, my gaydar is broke.” We all laughed hysterically and enjoyed the rest of the night.

They are still my good friends. I just feel like an idiot. The sad part is, I still have a crush on the guy 🙁
Here is the dish I made that night. My fellas loved it, and I hope you do too. 

Ingredients:

  • 4½ cups rotisserie chicken, chopped
  • 4 ounces cream cheese, softened
  • 1 cup cottage cheese
  • ½ cup sour cream
  • 1 can (10.5 ounces) unsalted cream of chicken soup
  • 1½ teaspoons Bald Buck seasoning
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 sleeve Ritz crackers, crushed
  • 5 tablespoons butter, melted

Instructions:

  • Prepare the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish.
  • Mix the Filling: In a large bowl, combine the chopped chicken, softened cream cheese, cottage cheese, sour cream, unsalted cream of chicken soup, Bald Buck seasoning, garlic powder, and onion powder. Season with salt and pepper to taste.
  • Assemble the Casserole: Spread the chicken mixture evenly into the prepared baking dish.
  • Add the Topping: Mix the crushed Ritz crackers with the melted butter until well combined. Sprinkle this mixture over the chicken filling.
  • Bake: Place the dish in the preheated oven and bake, uncovered, for 30 to 40 minutes, or until the casserole is bubbly and the topping is golden brown.
  • Serve: Once done, remove from the oven and let it sit for a few minutes before serving.

Pro Tips:

  • Make Ahead: You can prepare this casserole in advance. After assembling, cover and refrigerate until ready to bake. If baking from cold, you might need to add a few extra minutes to the baking time.
  • Soup Options: While cream of chicken soup is recommended, you can substitute with other condensed cream soups like cream of mushroom or cream of celery, based on your preference.
  • Bald Buck: It is key here. BBQ Pitmasters use it for their meat but I learned it makes for one hell of a seasoned salt. Try it in this dish but more importantly, experiment with it as the salt in your other dishes.
