I am retired. Recently I decided to do volunteer work at an after school program for low income families. Everyone at the program is nice to me. However, there is no denying it. I stand out. Like a cotton ball in a bag of coffee beans, you notice me and you wonder what the hell am I doing there.
Last week, I took my granddaughters with me to serve at the after school program. One is 6 and the other is 4. After we got done serving, my grandaughters asked if they could playground. I said “Sure!” My daughters could care less that they are the only 2 white kids on that playground. They made friends instantly.
After a while both the girls start playing on a climbing wall. They were having a blast. I noticed my 4 year old granddaughter was getting the hang of it really fast. So I walked up to her and said “Good job Sadie! Pretty soon you’re going to be faster than your sister.” My 6 year old granddaughter was not happy with the compliments I was giving her little sister. She hoped off the wall, puts her hands on her hips and yells……
“Grammy, You Have To Stop Saying Racist Things All The Time!”
At that moment, you could’ve heard a pin drop. Everyone went dead silent. All the parents, kids and staff were staring at me like I had 2 heads. My heart felt like it was about to explode from my chest. I got it together and loud enough for everyone to hear said ‘What do you mean honey, what have I ever said that was racist?” My granddaughter replies “You turned this climbing game into a race. You’re a racist!”
There was a 2-second pause that felt like an eternity. Then, one of the older kids fell on the floor laughing to the point of tears. Then everyone else started laughing. Bless my granddaughter’s innocent little heart.
This Melt In Your Mouth chicken recipe is a hit for my family. I made this recipe for the kids and staff at the center and it was a hit there too. The kids at the center ask me to make it again every time they see me. Hope you enjoy it as well.
Ingredients:
- 1 cup of mayonnaise or Miracle Whip
- 1/2 cup of freshly grated Parmesan cheese
- 1/2 teaspoon of Bald Buck Seasoning
- 1/2 teaspoon of ground black pepper
- 1 teaspoon of garlic powder
- 4 boneless chicken breast halves
Instructions:
- Start by preheating the oven to 375 degrees.
- Grab a baking dish and place the boneless chicken breast halves in it neatly. Make sure they’re spread out evenly and not on top of each other.
- Take a clean bowl and mix the mayonnaise, Parmesan cheese, Bald Buck Seasoning, pepper, and garlic powder together really well until it’s all blended nicely.
- With a spatula or the back of a spoon, spread the mayonnaise or Miracle Whip and Parmesan mix you made earlier all over the chicken breast halves so they’re covered evenly. Do a light coating to be safe. You could always add more next time you make it.
- Put the baking dish in the oven that’s already hot and bake the chicken for about 45 minutes. Make sure the chicken is cooked all the way through and the top turns golden brown. You can check if the chicken is ready by using a meat thermometer; it should show 165 degrees
Pro Tips:
- If you’re not a fan of mayo or Miracle Whip, you can try sour cream or Greek yogurt.
- You don’t have to use parmesan cheese. You can replace it with Romano or Asiago.
- If you don’t like chicken breast, you can use chicken thighs instead. Just make sure you change the cooking time.
- Bald Buck Seasoning is key here. BBQ Pitmasters use it for chicken but I learned it makes for one hell of a seasoned salt. Use it for the chicken. More importantly, experiment with it as the salt in your other dishes. It adds this unique flavor that is amazing but nobody will be able to put their finger on what that flavor is.
