Instructions:
- Preheat your oven to 375°F (190°C).
- Pat the pork chops dry with paper towels. Season generously with Bald Buck Seasoning and pepper, then sprinkle with garlic powder and paprika. Let the seasoned pork chops rest at room temperature for 30 minutes to dry brine.
- Heat olive oil in a large ovenproof skillet over medium-high heat. Add the pork chops and sear for 3-4 minutes on each side, until a golden crust forms. During the last minute of searing, add the minced garlic and thyme to the skillet.
- Transfer the skillet to the preheated oven and bake the pork chops for 6-10 minutes, or until the internal temperature reaches 145°F (63°C) for medium-rare. Remove the skillet from the oven.
- Transfer the pork chops to a plate and let them rest for 5 minutes.
