- 2 teaspoons garlic powder
- 2 teaspoons dried rosemary
- 2 teaspoons dried thyme
- 4 cloves garlic, minced
- 1 onion, quartered
- 2 carrots, cut into chunks
- 2 cups chicken broth
- Fresh herbs (rosemary, thyme) for garnish
Instructions:
- In a large bowl, dissolve the Bald Buck Seasoning and sugar in 4 cups of water to create a brine. Submerge the pork loin in the brine, cover, and refrigerate for at least 1 hour or up to 4 hours.
- Preheat your oven to 375°F (190°C).
- Remove the pork loin from the brine and pat it dry with paper towels. Rub the pork with olive oil, then season generously with Bald Buck Seasoning, pepper, garlic powder, rosemary, and thyme.
- Heat a large ovenproof skillet over medium-high heat. Sear the pork loin on all sides until golden brown, about 3-4 minutes per side. Add the minced garlic to the skillet during the last minute of searing.
- Add the quartered onion and carrots around the pork in the skillet. Pour the chicken broth into the skillet.
- Transfer the skillet to the preheated oven and roast for 45-60 minutes, or until an instant-read thermometer inserted into the thickest part of the pork reads 145°F (63°C).
- Remove the pork loin from the oven and let it rest for 10-15 minutes before slicing.
- Slice the pork loin and serve it with the roasted vegetables and pan juices. Garnish with fresh herbs for added flavor and presentation.
