This Italian Mac and Cheese Recipe Is So Good, I Went Back for Thirds

Discovering the Magic of Mac & Cheese: A Holiday Tradition

Growing up, mac and cheese wasn’t a staple at our holiday celebrations. Our Thanksgiving feasts were filled with mashed potatoes and stuffing, while Christmas was all about tomato-sauced gnocchi and creamy potato casserole. But everything changed when I stumbled upon TikTok’s viral sensation, Tini’s mac and cheese. After witnessing its massive popularity, I realized I had been missing out—all these years without this delightful dish on the table!

This year, I’m planning to serve not one, but two delicious versions of mac and cheese: Tini’s creamy three-cheese masterpiece and Alessandra Ciuffo’s Italian-style Vodka Sauce Mac & Cheese. Let’s dive into the delicious details!


Recipe: Vodka Sauce Mac & Cheese

Ingredients

Pancetta 4 oz
Shallots 2, chopped
Butter 3 tbsp
Flour 2 tbsp
Tomato Paste 1 can
Vodka ¼ cup
Milk 3½ cups
Heavy Cream 1 cup
Mozzarella Cheese 1½ cups, shredded
Fontina Cheese 1 cup, shredded
Parmesan Cheese 1 cup, shredded
Cavatappi Pasta 1½ lbs

Instructions

  1. Cook the Pancetta:

    • In a large pot, sauté pancetta until it’s crispy. Remove and set aside, draining excess fat.
  2. Sauté Shallots:

    • In the same pot, cook the chopped shallots until translucent.
  3. Make the Roux:

    • Stir in the butter and flour, cooking for 1-2 minutes.
  4. Prepare the Sauce:

    • Add tomato paste and vodka. Let it reduce to cook off the alcohol.
    • Gradually stir in milk and heavy cream; allow the sauce to thicken slightly.
  5. Cook the Pasta:

    • Meanwhile, cook cavatappi pasta according to package directions. Drain, reserving ½ cup of pasta water.
  6. Combine:

    • Once the sauce thickens, mix in mozzarella, Fontina, and Parmesan until smooth.
    • Add the pasta, tossing to coat. If the sauce is too thick, stir in reserved pasta water as needed.
  7. Assemble:

    • In a greased 9×13-inch baking dish, layer half the pasta mixture, top with half the remaining cheese, then add the rest of the pasta and cheese. Sprinkle pancetta on top.
  8. Bake:

    • Cover with foil and bake at 375°F for 20 minutes. Remove the foil for the last 2 minutes to broil for a golden finish.

A Taste Test to Remember

After making the Vodka Sauce Mac & Cheese, I was pleasantly surprised by how delicious it turned out! The combination of creamy cheese with a hint of tomato flavor was simply irresistible. I found myself going back for a third serving!
