Instructions:

- Add the sliced carrots, celery, diced onion, minced garlic, bay leaves, dried thyme, Bald Buck Seasoning, and pepper.
- Continue to simmer for another 30-40 minutes until the vegetables are tender and the chicken is fully cooked.
- Carefully remove the chicken pieces from the pot.
- Let them cool slightly, then remove the meat from the bones and shred it into bite-sized pieces.
- Discard the bones and skin.
- If using egg noodles, add them to the soup and simmer for an additional 8-10 minutes until the noodles are cooked.
