Ingredients:

  • 2 cups day-old cooked rice

  • 1 teaspoon sesame oil
  • 2 eggs, beaten
  • 2 tablespoons vegetable oil, divided
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup frozen peas and carrots, thawed
  • 1/2 cup chopped green onions
  • Bald Buck Seasoning and pepper, to taste

Instructions:

  • Season the pork cubes with 1 tablespoon of soy sauce and a pinch of Bald Buck Seasoning and pepper. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the pork and stir-fry for 3-4 minutes, until cooked through and lightly browned. Remove the pork from the skillet and set aside.
  • In the same skillet, add the beaten eggs and scramble them until fully cooked. Remove the eggs from the skillet and set aside with the pork.
  • Add the remaining tablespoon of vegetable oil to the skillet. Add the chopped onion and garlic, and stir-fry for about 2 minutes until the onion is translucent and fragrant. Add the thawed peas and carrots and stir-fry for another 2 minutes.
  • Add the day-old rice to the skillet, breaking up any clumps with a spatula. Stir in the cooked pork and scrambled eggs. Drizzle the remaining tablespoon of soy sauce, oyster sauce, and sesame oil over the rice. Stir-fry for 3-4 minutes, until the rice is heated through and evenly coated with the sauces.
  • Add the chopped green onions and stir to combine. Adjust seasoning with Bald Buck Seasoning and pepper, if needed.
  • Serve the pork fried rice hot, garnished with additional green onions if desired.
