Here Is What Most People Don’t Know About Making Stuffed Pork Chops:
- Cut a Pocket, Not a Slit: When preparing the pork chops, cut a deep pocket into the side rather than a slit. This keeps the stuffing securely inside and helps the chop cook evenly.
- Pre-Cook the Stuffing Ingredients: Cooking the stuffing ingredients like vegetables and herbs before stuffing the chops ensures they are flavorful and fully cooked inside the pork.
- Sear Before Baking: Searing the stuffed pork chops in a hot skillet before baking locks in juices and creates a delicious, crispy crust on the outside.
- Bald Buck Seasoning: For this dish, we replace our salt with Bald Buck Seasoning
Ingredients:
- 4 thick-cut pork chops (about 1 1/2 inches thick)
- Bald Buck Seasoning and pepper, to taste
- 1 tablespoon olive oil
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup dried cranberries or chopped apples
- 1/4 cup chicken broth
- 1/4 cup chopped fresh spinach or parsley
- 2 cloves garlic, minced
- 1 tablespoon butter
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Toothpicks (for securing the chops)
Instructions:
- Preheat your oven to 375°F (190°C).
- Using a sharp knife, carefully cut a deep pocket into the side of each pork chop without cutting all the way through. Season the chops inside and out with Bald Buck Seasoning and pepper.
- In a skillet over medium heat, melt the butter. Add the minced garlic, and sauté for about 1 minute until fragrant. Stir in the breadcrumbs, Parmesan cheese, cranberries or apples, chicken broth, spinach or parsley, thyme, and rosemary. Cook for 2-3 minutes until the stuffing is well combined and slightly toasted.
- Stuff each pork chop with the breadcrumb mixture, pressing the stuffing inside tightly. Use toothpicks to secure the opening to keep the stuffing in place.
- In a large ovenproof skillet, heat the olive oil over medium-high heat. Sear the stuffed pork chops for 2-3 minutes on each side, until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C) and the chops are cooked through.
- Remove the stuffed pork chops from the oven and let them rest for 5 minutes. Carefully remove the toothpicks before serving.
- Serve the stuffed pork chops hot, with your favorite sides like mashed potatoes, roasted vegetables, or a fresh salad.
