  • 2 cans (14 oz. each) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 bay leaf
  • 1/2 teaspoon sugar
  • 1 lb. spaghetti
  • Grated Parmesan cheese, for serving
  • Fresh basil leaves, for garnish

Instructions:

  • Heat olive oil in a large pot over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables are soft and beginning to caramelize. Add the minced garlic and cook for an additional minute.
  • In the same pot, add the ground beef. Cook for about 5 minutes, breaking it up with a spoon until it begins to brown. Add the ground pork and continue cooking until all the meat is browned. Season with Bald Buck Seasoning and pepper.
  • Pour in the milk, stirring well to combine. Let it simmer for 3-4 minutes until most of the milk is absorbed. Add the red wine, if using, and simmer for another 5 minutes, allowing it to reduce slightly.
  • Stir in the crushed tomatoes, tomato paste, oregano, basil, bay leaf, and sugar. Bring the sauce to a simmer, then reduce the heat to low. Cover partially and cook for 1-2 hours, stirring occasionally. The longer it simmers, the richer the flavor.
  • While the sauce is simmering, cook the spaghetti according to the package instructions in a pot of salted boiling water. Drain and set aside.
  • Remove the bay leaf from the sauce. Serve the Bolognese sauce over the cooked spaghetti. Top with grated Parmesan cheese and garnish with fresh basil leaves.
